When people talk about Bengali food, they mostly t When people talk about Bengali food, they mostly talk about fish, or rosogolla, or misti doi. It’s astounding to me how little people know about the everyday Bengali vegetarian fare, which constitutes such a massive part of the Bengali cuisine. Take for example Aloo Posto. I have met very few non-Bengalis who had heard about it. But if you think about it, Aloo Posto should be the single most representative Bengali dish ever. Made with potatoes simmered in a thick poppy-seed-paste, the dish carries some of the therapeutic properties of the parent opium plant. A nutrient-rich food, poppy seeds soothe anxiety, ease pain, relax muscles, and help with sleep. Aloo Posto is so easy to make and so soporific that it is both the harbinger and purveyor of Bengali lyadh.Recipe link in bio.

Tadka is the most iconic dhaba dish of Kolkata wit Tadka is the most iconic dhaba dish of Kolkata with a history as elusive as its recipe. Kolkata dhaba style tadka, or “Torka” is basically the Punjabi ma ki dal or kaali dal recipe that has been heavily modified to cater to the famously discerning Bengali palate. Before the torka was invented in 1970s (most likely) a meal of just dal and roti was inconceivable in Bengal because Bengali food has a traditionally developed multi-course tradition that is comparable in structure to the modern service à la russe style of French cuisine in which food is served course-wise rather than all at once. Even a very humble Bengali meal requires a serving of mashed potatoes and subzi, if not fish, along with dal and rice. So, to appease a Bengali clientele, dhabas transformed the simple homestyle dal into a rich, robust and extremely flavorful side dish, often made with crispy egg bits and minced mutton, and Bengalis have been fascinated ever since. The Kolkata dhaba style tadka, which is not available in any other state in India, was a nod to the culinary legacy of Calcutta while sticking to the traditional, hearty flavors and techniques of Punjabi cuisine.In addition to being the most delicious vegetarian/vegal dal ever,  the biggest attraction of torka is that it is inexpensive and sustainable Indian food. However, its appeal is not limited to highway truck joints. It is indeed the egalitarian nature of this dish that has earned “torka ruti” the respect of one of the most loved meals in the city. ⁣Recipe link in bio.

⁣ It’s been nearly a year since I have been to ⁣ It’s been nearly a year since I have been to Kolkata, and will likely be another until I can go back. And I have realized, unsurprisingly, that it’s the food I miss most about Kolkata. And of all of the foods, I miss chili chicken the most. Anyone who knows me knows that I am obsessed with this dish. When people invite me over, they make or order chili chicken. When they take me out, they take me to my favorite Chinese restaurants in the city. I can unhesitantly say that chili chicken is my most favorite food in the whole world. Therefore, I have been making a lot of it at home lately. So much so that I have perfected the recipe and could easily find a job at China Town. Wouldn’t that be nice? Because then I would get to eat chili chicken every day! 🥲😍Recipe link in bio.

Traditionally, Shukto (Bengali) requires a long list of ingredients. An authentic shukto has potatoes, sweet potatoes, bitter gourd, drumsticks, eggplant, papaya, plantains, snow peas, white radish, and bori (recipe on the blog). This means that it is impossible to make shukto just for 2 people. Shukto seems like an unreasonable choice for everyday cooking. Which is a shame because shukto is vegetarian/vegan and so nutritious.  It is also especially difficult for those who live outside of Bengal to source the quintessential shukto spices. So what do you do when you are stranded at a foreign port with no access to radhuni (a tempering spice) for the foreseeable future? What do you do when you must make shukto just for yourself? ⁠⠀

Answer: You make shukto with whatever you have. The result is surprisingly similar to the authentic shukto with all the things. ⁠⠀

I had half a lonesome bitter gourd, one sweet potato, some green beans, half an eggplant, and some homemade boris. I had no radhuni but it didn't matter. Please try this skukto recipe with whatever leftover vegetables you have. Even if you only have carrots and peas and let us know how it goes. 🙂⁠⠀

In my first year in grad school, I was tasked with In my first year in grad school, I was tasked with organizing an Indian Diwali dinner for some international students. Back then I didn’t cook a whole lot. I didn’t have an overstocked pantry and I didn’t have access to an Indian grocery. So I knew I had to make something with simple everyday ingredients and yet make it rich, delicious and uncomplicated enough for everyone’s taste. It didn’t take a lot of planning as a bag of walnuts was literally staring at me. I made this walnut chicken. Ingredients:
1 tbsp bread crumbs
Salt, black pepper powder, red chili flakes/paprika to taste
Butter or olive oil to grease the pan
2 eggs
Salt and black pepper powder to taste

Method:
Season breadcrumbs.
Heat butter/oil in a nonstick pan.
Add bread crumbs and crisp a little by stirring.
Now add the 2 eggs, cover and cook over medium heat for 2 minutes. ⁣Season with salt and pepper and serve hot.
