Nolen gurer ice cream

Ice cream made with a special kind of Bengali jaggery and coconut. It can be churned or unchurned. Absolutely delicious and a very easy dessert for entertaining guests.

Ingredients

  • 1 cup sweetened condensed coconut milk/sweetened condensed milk If using sweetened condensed milk then grated coconut is recommended.
  • 1 cup low fat milk
  • 1 cup heavy whipping cream
  • 1/4 cup nolen gurer sandesh soft, crumbled
  • 1/4 cup grated coconut
  • 3/4 cup nolen gur
  • Plus extra nolen gur for serving

Instructions

  • Mix everything in a large bowl using a hand mixer or wire whisk.
  • Pour mixture into the canister of an ice cream maker. Freeze according to the manufacturer's directions. Eat at once or transfer to a covered container and freeze up to 8 hours.
  • If you don't have an ice cream maker, then transfer mixture to an air-tight container and freeze for 8 hours.
  • Make sure there are no water droplets in the container before pouring the mixture.

Notes

You may use hardened jaggery or patali gur in the absence of nolen gur. In that case, you will need to microwave the gur to melt it or boil it in the milk. You will then need to cool the milk down before mixing it with the other ingredients.
